The influence of production environments on antioxidant activity, phenolics, and specific gravity in potato (Solanum tuberosum L.).

ENVIRONMENTAL conditions influence crop productivity and quality, including phytonutrient levels. The objective of this study was to investigate the variability in antioxidant activity (AOA), total phenolic content, individual phenolic compounds, and specific gravity among potato cultivars grown under widely diverse environmental conditions. Correlations among traits were also investigated. Four cultivars (Atlantic, Red LaSoda, Russet Norkotah, and Yukon Gold) grown in eight states (Idaho, Wisconsin, Oregon, California, Michigan, Minnesota, North Carolina, and Texas) were used. Two methods, 2,2-diphenyl-1-picrylhydrazyl (DPPH) and 2,2’-azinobis(3-ethyl-benzothiazoline-6-sulfonic acid) (ABTS), were employed to evaluate AOA. Total phenolic content was estimated using the Folin-Ciocalteau method. Differences in individual phenolic compounds present in potato extracts were quantified using HPLC. Significant differences in AOA and total phenolic content were observed among cultivars within and between locations. Atlantic consistently exhibited the lowest values for both AOA (ranging from 40.7-86.72 μgTE/gfw) and phenolic content (31.8-49.8 mg/100gfw), and the highest specific gravity. Russet Norkotah had the highest AOA and phenolic content and low specific gravity. Interactions between variety and growing location were significant for AOA and phenolic content, as indicated by varying levels and rankings of the varieties at different locations, implying that these interactions are variety specific. This was especially true for Red LaSoda and Yukon Gold. There were positive correlations between AOA and total phenolics. However, correlations between AOA and specific gravity, as well as total phenolic content and specific gravity, were negative.
